Mastering the Flame: How to Operate Your Forno Classico Gas Oven

Operating a professional-grade Forno Classico oven is simple once you understand the gas control sequence. Whether you are firing up for a pizza party or maintaining a steady heat for slow roasting, here is everything you need to know about your oven's gas controls.

Getting Started: The Control Interface

Your Forno Classico features a high-precision gas control knob with four primary positions:

  • Off: Gas flow is completely restricted.
  • Pilot (Spark Icon): Used to ignite and maintain the pilot light.
  • Maximum (Large Flame): Full power for rapid pre-heating and high-temp baking.
  • Minimum (Small Flame): Low power for maintaining temperature or slow cooking.

Step-by-Step Operating Instructions

1. Lighting the Pilot

  • Turn the control knob to the Spark/Pilot icon.
  • Push the knob in about a quarter-inch and hold it.
  • While holding the knob in, press the red starter button repeatedly until you see the pilot flame ignite inside the oven.
  • Hold the knob for 20 seconds: This allows the thermocouple to warm up, ensuring the gas stays on safely.

2. Igniting the Main Burner

  • Once the pilot is steady, push the knob in slightly and turn it to the left to the "High" position.
  • The main burner will ignite, providing a powerful flame to heat the stone floor and dome.

3. Adjusting the Temperature

  • To dial in your heat, push the knob in and turn it toward the small flame icon.
  • This allows you to regulate the intensity of the flame for various cooking styles, from high-heat Neapolitan pizzas to lower-temp artisan breads.

4. Maintaining "Standby" Mode

  • If you are done cooking for a moment but want to keep the oven ready, turn the knob back to the Pilot position. The main flame will go out, but the pilot will stay lit for an easy restart.

For your convenience, every Forno Classico oven includes two permanent tags:

  • The Burner Sequence Tag: Located on the frame, this provides a quick-reference guide for the lighting steps mentioned above.
  • The Certification Tag: Located near the thermometer, this contains critical data for technicians, including BTU ratings and safety certifications.

Pro Tip: If you haven’t used your oven in a while, there may be air in the lines. It might take a few extra seconds for the pilot to catch—this is perfectly normal!
