FIRING YOUR FORNO CLASSICO OVEN
In the beginning, you will notice a blackening of the oven dome.
When the oven dome turns white, it is an indication that the oven has reached cooking temperature (700-800 degrees F.)
Once the oven dome has turned white, push the burning wood, coals and ash to the back of the oven and begin cooking the pizza. Pizzas should take one to two minutes or so to bake.
In order to maintain a proper temperature for the duration of your pizza baking, from time to time add a piece of wood or two to the fire at the back of the oven.
Once you have finished with baking, allow the fire to die out.
IMPORTANT! Do not close the oven door while there is active flame inside the oven. If the door is closed while fire is actively burning, a vacuum may be created inside the oven which could result in a burst of flames when the door is opened . This may have the potential of physical harm and/or property damage.
Once the fire is out, you may attach the door to maintain the heat and monitor the oven temperature if you wish to roast meat or cook casseroles, side dishes or bread.
